National Eye Health Week – Fooooooood!

Maintaining a balanced diet is vital for anyone. There’s certain foods that can help reduce the risk of certain eye conditions such as Age-related Macular Degeneration (AMD), Glaucoma and even dry eye syndrome. In order to maintain good eye health, it’s ideal to eat foods that include lutein, Vitamins A, C and E, zinc and omega-3 fatty acids. You can find all these types within eggs, fish, almonds, dairy products, kale, oranges and carrots. Please note, eating more carrots will not make you see in the dark (thank you dad for always making me eat my vegetables!)

Ideally, any foods that are brightly coloured fruit or vegetables are going to do a world of good for your health and wellbeing. So here’s and handy recipe to accompany any meat dish or even be a standalone dish itself! May I present to you… Tomato Stuffed Bell Peppers!

Ingredients:
– 2 or more red bell peppers
– a handful of cherry tomatoes chopped
– 2 garlic cloves, thinly sliced
– a small handful of Kalamata olives chopped
– 3oz Feta cheese crumbled
– 1/4 cup basil chopped
– 2 tbsp olive oil
– salt and pepper

Method:
1. Preheat the oven to 200 degrees. Lightly spray a shallow baking dish with Fry Lite or any other alternative.
2. Cut the bell peppers in half lengthways, removing the seeds, ribs and leaving the stem. (This will provide some structure to the pepper whilst cooking)
3. In a medium sized bowl, combine the chopped tomatoes, sliced garlic, chopped olives, crumbled feta cheese, chopped basil and olive oil, and season with some salt and pepper. Gently mix together in the bowl.
4. Fill each pepper half with the mixture, dividing it equally between all the bell peppers. Cover the dish loosely with foil.
5. Bake in the oven for 30 minutes.
6. Then remove the foil and continue baking for another 15 minutes. The cheese will have started to turn light brown and the peppers will tender. This can be served hot or at room temperature.
